In the Tang Dynasty, tea drinking achieved even greater popularity. Since tea can stimulate thinking, scholars took delight in it wrote poems, painted pictures with the subject of tea. During this period Lu Yu (733-804AD) wrote the Book of Tea, which is the first book about tea. The Book of Teas introduced the origin of tea, the nature of tea, process of producing tea, method of drinking tea and tea drinking vessels. Later Lu was called the “Saint of Tea”.
During the Song and Yuan Dynasties (960-1368AD), appraising tea was popular. Although people would not add ginger and salt into the tea when drinking but they still emphasized on boiling tea instead of making tea directly with hot water.
Over the long history of tea drinking in China, the Chinese tea culture came into Beijing. Drinking tea was not only for quenching thirst or for enjoyment, but also for the promotion of friendship and mutual understanding. In addition, tea inspired many cultural activities. So many tea-related poems, paintings, songs, dances and operas appeared in the old times in China. There were so many tea houses appeared in the streets in cities and there gathered all kinds of people drinking tea and enjoying shows and storytelling. Even disputes among the people were judged and mediated in the teahouse. To some extent, the teahouses were a microcosm of social life of china in the past.
